Brandied Sweet Potatoes

Ingredients:
4 whole(s) sweet potatoes (large)
1/2 cup(s) butter
1 cup(s) brown sugar
1/2 cup(s) brandy
Directions:
1. Boil sweet potatoes until soft and remove skin. Cut in 1 to 1.5 slices. Put in a lightly greased 13 X 9 pan. Melt butter. Add brown sugar and cook until sugar is melted. Add the Brandy and stir together but do not continue heating or boil. Pour butter, brown sugar and Brandy mixture over potatoes. Cook in 350 degree oven until sauce thickens. Approximately 30 minutes. Baste frequently. Can be cooked day before and then warmed up in oven. Cover when warming up.
