Brandied Sweet Potatoes

The butter and sugar are basic to sweet potatoes, but the brandy in this recipe really makes you take notice! Yummy dish....
Ingredients:
2lbs. medium size sweet potatoes
1/2c. firmly packed brown sugar
3tbs. butter
3tbs. brandy
Directions:
1. Cook sweet potatoes in boiling water to cover in a large Dutch oven 35 minutes or until potatoes are tender; drain.
2. Cool potatoes slightly, and peel. Cut potatoes crosswise into 1/2 inch thick slices.
3. Cook brown sugar and next 3 ingredients in a large skillet over medium heat, stirring constantly, until mixture is bubbly.
4. Add potato slices to skillet; cook, stirring mixture gently, until potatoes are glazed.
5. Serve immediately.
