Peaches are plentiful during the summer so collect and can them! Then it's so nice to break out the spiced peaches when it's cold outside! Ingredients:
4 quarts ripe peaches (about 5 lbs.) |
3 cups sugar |
1 cup brandy |
1 orange, sliced |
cinnamon sticks |
whole cloves |
Directions:
1. wash and blanch peaches (about 1 minute) 2. Drop into cold water and peel off skins 3. Halve and pit large peaches, leave small peaches whole. 4. Drop into a brine bath to prevent discoloration. 5. Combine sugar and 1-1/2 cups water in a pot and bring to a boil. 6. Stir until the sugar dissolves and then cover to keep hot. 7. Drain the peaches and then pack in pint or quart jars to 1/2 from the top. 8. Add 2-3 orange slices, 1 cinnamon stick, and 3-4 whole cloves. 9. Stir brandy into the hot syrup and pour into jars leaving 1/2 space. 10. Wipe the jar top and seal. 11. Process pint jars in a boiling bath for 20 minutes, quart jars for 25 minutes. |
