Ingredients:
1 1/2 cups sugar |
1 1/2 cups firmly packed brown sugar |
2 cups water |
3 pounds nectarines (about 12), peeled and halved |
3/4 cup brandy |
Directions:
1. Combine sugar and water in a large heavy skillet. Cook over medium heat, stirring constantly, until mixture comes to a boil and sugar dissolves. Add nectarines. Cover and reduce heat; simmer 4 minutes. Turn fruit; cover and continue to simmer 4 minutes or just until tender. 2. Pour 1/4 cup brandy into each hot sterilized jar. Pack nectarines into jars, reserving syrup. 3. Cook reserved syrup over medium heat 15 minutes or until slightly thickened. Pour over nectarines, leaving 1/2-inch head space. Cover with metal lids, and screw bands only fingertip tight. Process in boiling water bath 10 minutes. Let stand in a warm, dark place 1 month before serving. |
