Ingredients:
10 medium nectarines |
1 cup sugar |
1 cup water |
1/2 cup plus 2 tablespoons brandy, divided |
2 tablespoons vanilla extract |
1/2 cup whipping cream |
2 tablespoons sifted powdered sugar |
fresh raspberries |
mint leaves |
Directions:
1. Place nectarines in a wire basket or cheesecloth, and dip into boiling water 1 minute. Plunge nectarines in cold water; drain. Remove skin. 2. Combine nectarines, sugar, and water in a medium saucepan; bring to a boil. Reduce heat, and simmer 1 minute. Stir in 1/2 cup brandy and vanilla; chill thoroughly. 3. Drain nectarines, and place each in a chilled individual dessert dish. Combine whipping cream, powdered sugar, and remaining brandy, mixing well. Spoon over nectarines. Garnish with raspberries and mint leaves. |
