Brandied Caramel Flan

Ingredients:
3/4 cup granulated sugar
2 cups milk
2 cups light cream
6 eggs
1/2 cup sugar
1/2 teaspoons salt
2 teaspoons vanilla extract
1/3 cups brandy
boiling water
Directions:
1. Place sugar in large, heavy skillet then cook over medium heat until sugar melts and forms a light brown syrup.
2. Stir to blend well then immediately pour syrup into heated round shallow baking dish.
3. Quickly rotate to cover bottom and sides completely then set aside.
4. Preheat oven to 325.
5. In medium saucepan heat milk and cream just until bubbles form around edge of pan.
6. In large bowl with rotary beater beat eggs slightly then add sugar, salt and vanilla.
7. Gradually stir in hot milk mixture and brandy then pour into prepared dish.
8. Set dish in shallow pan and pour boiling water to 1/2 level around dish and bake for 40 minutes.
9. Allow to cool and room temperature then refrigerate at least 4 hours or overnight.
