Yummy and good. Ingredients:
1/2 cup grated zucchini |
1 banana |
4 t low fat sour cream |
1 cup whole wheat flour |
1 cup wheat bran |
1 tsp baking soda |
1/4 cup brown sugar |
1 tsp cinnamon |
1/8 tsp cloves |
1/4 tsp salt |
1 egg |
1 tbsp extra virgin olive oil |
Directions:
1. Chop the zucchini and banana in a blender or food processor. 2. Add the egg, oil, and sour cream to the zucchini and blend. 3. Mix the dry ingredients in a bowl. 4. Add the zucchini mixture to the dry ingredients and stir until moist throughout. 5. Spoon into muffin tins. 6. Bake at 350 for 20-25 minutes or until done. |
