Ingredients:
1/2 cup grated zucchini
1 banana
4 t low fat sour cream
1 cup whole wheat flour
1 cup wheat bran
1 tsp baking soda
1/4 cup brown sugar
1 tsp cinnamon
1/8 tsp cloves
1/4 tsp salt
1 egg
1 tbsp extra virgin olive oil
Directions:
1. Chop the zucchini and banana in a blender or food processor.
2. Add the egg, oil, and sour cream to the zucchini and blend.
3. Mix the dry ingredients in a bowl.
4. Add the zucchini mixture to the dry ingredients and stir until moist throughout.
5. Spoon into muffin tins.
6. Bake at 350 for 20-25 minutes or until done.
