BRAN WALNUT BANANA PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Maxwell Estate in Grand Prairie, Texas in 1981. Ingredients:
1 cup all purpose flour |
1/2 teaspoon baking soda |
1/2 cup bran flour |
1/4 cup cornmeal |
1 beaten egg |
1-1/2 cups buttermilk |
1 ripe banana mashed |
2 tablespoons butter melted |
2 teaspoons honey |
1/4 cup toasted walnuts |
topping |
1/4 cup dark brown sugar |
2 tablespoons melted butter |
1/4 cup orange juice |
Directions:
1. In large bowl stir together soda, flours and toasted walnuts. 2. Mix together egg, buttermilk, melted butter and honey then stir just until mixed. 3. Combine topping ingredients and cook until syrupy. 4. Sauté bananas in syrup until warm and serve on pancakes with cream and two walnut halves. |
