A convenient way to have muffins when you want them fresh out of the oven. Ingredients:
4 cups all-bran |
1 tsp. salt |
1 quart buttermilk |
1 cup shortening |
5 cups flour, sifted |
2 cups 100% bran |
2 cups boiling water |
3 cups sugar |
4 eggs |
5 tsp. baking soda |
3 cups raisins |
Directions:
1. Combine all-bran and salt. 2. Stir in boiling water, then buttermilk. 3. Cool to lukewarm. 4. Cream sugar and shortening. 5. Add eggs one at a time, beating well after each. 6. Stir this into bran mixture. 7. Combine flour, baking soda and 100% bran. 8. Add to creamed mixture. 9. Add raisins. 10. Stir just enough to dampen dry ingredients. 11. Store batter in fridge until ready to use, will keep for 4 weeks. 12. Preheat oven to 375 degrees. 13. Fill greased tins 3/4 full. 14. Bale 20-25 minutes. |
