Good for you muffins that are not too sweet.
Ingredients:
1 1/4 cups wheat bran
1 cup milk
1 egg
1/4 cup oil
1/2 cup all purpose flour
1/2 cup whole wheat flour
1/4 to 1/2 cup brown sugar
1 1/4 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
*depending on level of sweetness desired.
Directions:
1. Preheat oven 400.
2. Line muffin tins.
3. Mix bran with milk and let stand for a couple of minutes.
4. Add egg and oil.
5. Mix.
6. Combine flours, sugar, baking powder, soda and salt in a separate bowl.
7. Mix wet and dry ingredients together.
8. Spoon into muffin tin.
9. Bake 15 to 20 minutes.
