Good for you muffins that are not too sweet. Ingredients:
1 1/4 cups wheat bran |
1 cup milk |
1 egg |
1/4 cup oil |
1/2 cup all purpose flour |
1/2 cup whole wheat flour |
1/4 to 1/2 cup brown sugar |
1 1/4 teaspoon baking powder |
1/2 teaspoon soda |
1/2 teaspoon salt |
*depending on level of sweetness desired. |
Directions:
1. Preheat oven 400. 2. Line muffin tins. 3. Mix bran with milk and let stand for a couple of minutes. 4. Add egg and oil. 5. Mix. 6. Combine flours, sugar, baking powder, soda and salt in a separate bowl. 7. Mix wet and dry ingredients together. 8. Spoon into muffin tin. 9. Bake 15 to 20 minutes. |
