I like to make this large batch and freeze them. Makes a good, quick breakfast. I'm working on decreasing the sugar, but it's really only a small amount of sugar per dozen muffins. Ingredients:
2 cups white flour |
2 cups wheat flour |
2 cups whole oats |
1 cup flax seed |
2 teaspoons salt |
4 tablespoons baking powder |
1 cup sugar |
5 cups bran buds (all bran cereal) |
3 cups total cereal |
1/4 cup canola oil |
1/4 cup molasses |
5 cups skim milk |
1 1/2 cups egg whites |
1 cup applesauce |
1 1/2 cups raisins (or assorted dried fruit) |
Directions:
1. Combine dry ingredients, set aside. Combine cereal and milk and soak about 5 minutes. 2. Add egg whites, applesauce, oil, and molasses. 3. Add dry ingredients to cereal, mix until just blended. 4. Add raisins. 5. Bake at 400 for 15-20 minutes. |
