Healthy muffins which are great with nut butter spread or Nutella from Bob's Red Mill. Ingredients:
1 cup wheat bran |
1 1/2 cups whole wheat flour |
1/2 cup raisins |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 cup milk |
1/2 cup maple syrup |
3/4 cup applesauce |
1/4 cup almonds, chopped |
2 tablespoons oil |
2 eggs, beaten |
Directions:
1. Preheat oven to 400°F. 2. Combine dry ingredients, stir in nuts and raisins. 3. In a seperate bowl blend applesauce, milk, molasses, oil and egg. 4. Add to dry ingredients and stir until moistened. spoon into greased muffin cups. 5. Bake for 15-20 minutes. |
