Make ahead batter for bran muffins Ingredients:
3 1/8 cups flour |
3 1/8 teaspoons baking soda |
1 1/4 teaspoons salt |
2 cups water |
3 3/4 cups wheat bran |
0.66 cup sugar |
0.66 cup splenda |
0.33 cup applesauce |
0.33 cup canola oil |
3 eggs |
2 1/2 cups buttermilk |
1 cup dried cranberries |
Directions:
1. mix first 3 ingredients 2. soak bran cereal in boiling water 3. cream oil, applesauce, sugar and splenda 4. add eggs and buttermilk 5. add bran 6. add dry ingredients 7. bake 20 minutes at 400 degrees 8. keeps 6 weeks in fridge |
