My mother-in-law makes these muffins, and they are delicious. She adds 1/4 cup flax seeds, and then increase buttermilk to 1 cup. She has also decreases the oil to about 1 tsp, and adds apple sauce (the ones that come in a cup. Ingredients:
1 cup all-bran cereal |
1 cup graham cracker crumbs |
1/2 cup all-purpose flour |
2 tablespoons whole wheat flour |
1/4 cup brown sugar, packed |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/2 cup raisins, coarsely cut |
1 egg |
1/3 cup oil |
1/4 cup molasses |
3/4 cup buttermilk |
1/2 teaspoon vanilla |
Directions:
1. Measure all dry ingredients into bowl. Mix in raisins. 2. in another bowl beat egg until frothy. 3. Add oil, molasses, buttermilk and vanilla, and beat to mix. 4. pour wet ingredients over dry ingredients, and stir just enough to moisten. 5. Spoon onto greased muffin tins, filling 3/4 full. 6. Bake in 375 F oven for 20 minutes. |
