I found this on the bag of Red Mill faxseed at my local health food store. Posting here for safe keeping Ingredients:
1 1/2 cups flour |
3/4 cup flax seed meal |
3/4 cup oat bran |
1/2 cup brown sugar substitute |
2 teaspoons baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
2 teaspoons cinnamon |
1 1/2 cups carrots, shredded |
2 apples, peeled and shredded |
1/2 cup raisins (optional) |
1/2 cup nuts, chopped |
3/4 cup skim milk |
2 eggs, beaten |
1 teaspoon vanilla |
Directions:
1. Mix together all the dry ingredients in a large bowl. Stir in carrots, apples, raisins and nuts. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry, stir until ingredients are moistened. Do not over mix. fill muffin cups 3/4 full. Bake at 350 for 12-15 minute. 2. makes 30 mini muffins. 3. Note: Directions are for regular sized muffins and are to yield 15 medium muffins, baked for 15-20 minute Time was adjusted for mini's. |
