Great served with warm with a little butter and some fresh fruit Ingredients:
1 cup 100% all-bran cereal (like all bran) |
1 cup quick-cooking oats |
1/2 cup raisins or 1/2 cup currants |
1 1/4 cups plain yogurt |
1 cup flour |
1/4 cup sugar |
1 tablespoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/3 cup margarine or 1/3 cup butter |
Directions:
1. Combine cereal, oats, raisins and yogurt. Let stand to soften. 2. Combine flour, sugar, baking powder and soda, salt, cinnamon, and nutmeg in a large bowl. 3. Cut in margarine until crumbly, then add cereal mixture and stir until just moistened. 4. Turn onto a floured surface and knead 10 times or until smooth. 5. Flatten to a 9 inch circle or 2 x 6 inch circles. Sprinkle with sugar and cinnamon. 6. Place on a greased cookie sheet and bake at 425 F for 20 minutes, then cut into wedges! |
