While you can cook these straight away after mixing in the ingredients it does taste better if you let the mixture sit for an hour. I normally cover the top of the mixing bowl and leave it in the fridge. I would almost say it ferments slightly so don't be alarmed. Warning - eating the raw mixture may taste really good but not in large quantities as the bran really works. Ingredients:
2 eggs |
1 1/2 cups sugar |
1/2 cup oil |
2 cups natural bran |
2 cups milk |
1 teaspoon salt |
1 cup raisins |
2 1/2 teaspoons bicarbonate of soda |
1 teaspoon vanilla essence |
2 1/2 cups flour |
Directions:
1. Cream the egg and sugar. 2. Add the oil, vanilla and milk. Beat well. 3. Add the flour, salt , bran and bicarbonate of soda. Mix. 4. Add the raisins. 5. Leave to stand overnight. 6. Stir in the morning. 7. Bake at 180C for 20 minutes. 8. Variations: Add grated carrots, grated apple or nuts You can add apple puree in place of half of the milk. |
