This is so dang good. Serve with pork chops, fried potatoes and cornbread. Ingredients:
1/2 lb bacon, diced |
2 mild banana peppers, seeded and chopped |
2 bags of fresh spinach leaves, rinsed |
balsamic vinegar, to taste |
Directions:
1. Cook bacon and peppers in a deep fry pan until the bacon is very crisp; set aside to cool, then crumble. Pour off all bacon fat, except enough to cover bottom of pan; set aside remaining fat and refrigerate for other uses. (NOTE: For future reference, indicate on dripping container that peppers were fried in it... which is NOT a bad thing LOL) 2. Reduce heat to medium low. Return bacon/pepper mixture to pan and add spinach leaves, one bag at a time, allowing to cook down between adding bags, until pan holds all of it. Stir occasionally. 3. Just before ready to serve, drizzle with balsamic vinegar if desired. |
