Directions:
1. In a large Dutch oven or heavy pot,melt 1 Tbs butter over medium. Add 1 medium onion,halved and thinky sliced, and 1 Gala or Fugi apple ,halved,cored and sliced and cook,stirring,until onion softens,4 to 6 mins. 2. Stir in 1 head red cabbage (2lbs) ,cored,quartered,and thinly sliced,and season with coarse salt and ground black pepper. Add 3 Tbs cider vinegar,4 tsp. sugar.and 1/2 c water. Bring to a boil;reduce to a simmer,cover,and cook until cabbage is tender.,20 to 25 mins. Season with salt ,pepper and sugar. |
