for radish lovers. Ingredients:
cooking spray |
1/4 cup minced red onion |
1 teaspoon fresh thyme leave, minced |
3 cups radishes (1 lb) |
1 cup dry white wine |
1 tablespoon butter |
salt |
1 tablespoon chopped parsley |
Directions:
1. spray a medium saucepan with cooking spray. 2. heat over medium-low heat. 3. add onions and thyme, cook 3 minutes. 4. stir in radishes, cook 2 minutes, stirring. 5. add wine. 6. bring to a boil. 7. cover, lower heat and simmer 5 minutes until radishes are tender. 8. remove radishes with a slotted spoon. 9. cook the wine mixture a few minutes more until reduced and thickened. 10. remove from heat. 11. stir in butter and salt to taste. 12. pour over radishes, sprinkle with parsley. |
