Braised Potatoes And Garlic |

This potato dish is ideal with grilled poultry or pork chops. An unusual way of serving potatoes. Ingredients:
1 kg potatoes |
1 tabs olive oil |
2 onions finely sliced |
2 cloves of garlic crushed |
500ml good chicken stock |
Directions:
1. Preheat oven to 190°C/Gas Mark 5. 2. Heat the oil in a saucepan and cook the onions and garlic until tender and then set aside. 3. Peel and slice the potatoes as thinly as possible, place a layer of potatoes over the bottom of the baking dish. Spread a thin layer of onions and garlic over the potatoes, repeat this process until the dish is full, finishing with a layer of potatoes on top. 4. Pour over the hot stock, place into the oven and cook for 1 hour until potatoes are tender. |
