Braised Peas with Prosciutto |

The prosciutto adds a lovely flavor. I like to add a bit of extra butter before serving. Ingredients:
2 tablespoons butter |
1/4 cup chopped onion |
1/3 cup reduced-sodium chicken broth |
2 cups frozen peas |
2 ounces prosciutto, diced |
salt & freshly ground black pepper, to taste. |
Directions:
1. Melt butter in a saucepan, add onions and cook over medium heat until soft and golden brown. 2. Add broth, bring to a boil, add peas, return to a boil, cover, reduce heat to low and simmer until tender (the amount of time will depend on the size of the peas, so check the package directions). 3. Add prosciutto, cook uncovered until most of the liquid is absorbed and season with salt and pepper. |
