This is a nice replacement for rice and potato. This is one recipe I take when we travel and are staying in condos. Ingredients:
3 tablespoons olive oil |
1 cup onion, chopped |
2/3 cup carrot, chopped |
1/2 cup celery, chopped |
1 1/4 cups green lentils, picked over |
4 cups chicken broth |
Directions:
1. Saute the veggies for 5 minutes. Add lentils and stir one minute. 2. Add stock and bring to a boil. Reduce and cook for 35 minutes. Add salt and pepper for seasoning. |
