Most people use leek only to make stock or maybe a leek-potato soup ( which I, and the kids, love ), but I also really like leeks as a side dish by itself, braised on a low flame or in the oven, with just some herbs and a good olive oil. 3 leek, halved lengthwise and thoroughly cleaned, than halved crosswise |
some thyme or summer savory |
s+p |
1/4 c olive oil, your best one, preferably a ' buttery ' one |
Directions:
1. Heat oil in a wide pan on a low flame, add leek with the cut side down, sprinkle with herbs and s+p, than slowly braise for 30 min, until lightly brown and soft. Let cool a little bit, serve. |
