Great for low glycemic index eating! Ingredients:
2 tablespoons olive oil |
4 c!oves garlic, minced |
1 bunch kale (about 11/4 pounds), leaves and stems coarsely chopped (see head note) |
3/4 cup canned reduced-sodium chicken broth |
1/4 teaspoon freshly grated nutmeg |
kosher salt |
freshly ground pepper |
Directions:
1. In a large saucepan over medium heat, warm the oil until it shimmers. Add the garlic and cook, stirring frequently until softened, about 1 minute. Add the kale and chicken broth, cover, and cook until the kale is very tender, about 10 minutes. Add the nutmeg and salt and pepper to taste and mix well.
