This dish gives eggplant a whole new taste. My family loves this. So easy to cook and yet so yummy! enjoy! Ingredients:
3 eggplants (the long ones) |
2 tbsp of minced garlic |
2 sweet onions (the small ones) |
2 tbsp of oyster sauce |
2 tsp of sugar |
4 tbsp light soy sauce |
1/2 tsp bottled chili bean sauce |
1 tsp sesame seed oil |
125ml or 1/2 cup of cooking oil |
63ml or 1/4 cup of water |
bottled minced garlic. |
Directions:
1. Cut the onions into halves and slice thinly. 2. Cut off the tips of the eggplants and slice into halves lengthwise. 3. Cut each half into 3-4 pieces. 4. Pour the cooking oil in a nonstick pan and fry the eggplants. 5. Make sure to fry them half-cooked only.The outer side are almost brown. 6. Remove the eggplants and place them on paper towels. 7. Pour off the cooking oil in the pan until only about 2 Tsp remains. 8. Saute the onions. 9. Add the garlic .Saute until golden brown but make sure not to overcook! 10. Add the oyster sauce,sugar,light soy sauce,and chili bean sauce. 11. Mix well. 12. Add the eggplants.Mix then lower the heat and simmer for about 3 mins. 13. Turn off the heat. Drizzle sesame seed oil and give the dish a final stir. 14. When serving,garnish with bottled minced garlic on top. |
