An Irish side dish. . .very easy to throw together and very tasty as well. Ingredients:
1 head celery |
1 medium onion |
1 teaspoon fresh parsley leaves, chopped |
2 slices bacon |
10 ounces chicken stock |
salt and black pepper |
1 ounce butter |
Directions:
1. Clean celery, cut into one-inch pieces and place in a casserole dish. 2. Finely chop bacon and onion and sprinkle over celery along with chopped parsley. 3. Pour on stock. Dot with knobs of butter. Cover dish and bake in a moderate oven for 30-45 minutes. |
