This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting tyhem here so I can find them easier. Hopefully, I will be able to make some of them after changing some of the ingredients (such as shortening to fry) and see how they turn out. Ingredients:
1 1/2 lbs calf liver |
1 cup onion, finely chopped |
1/4 cup shortening |
1 tablespoon paprika |
1 tablespoon tomato paste |
1/2 teaspoon salt |
Directions:
1. Slice liver in small, thin pieces. Brown the onions in shortening. Stir in the paprika and tomato paste. Add the liver. Cover and simmer over a low flame for 15 minutes, or until the liver is done. Add salt just before serving. |
