Braised Beef With Mushrooms |

An easy no fuss dinner. Lots of flavor in this one. Ingredients:
3 lbs boneless beef chuck roast |
1 tablespoon vegetable oil |
1 teaspoon salt |
1/2 teaspoon pepper |
1/2 lb fresh mushrooms, halved |
1 1/2 cups chopped onions |
3 tablespoons minced garlic |
1 1/4 cups beef broth |
1 bay leaf |
1 cup fresh peas or 1 cup frozen peas, thawed |
1/2 cup sour cream |
Directions:
1. Heat oil in dutch oven, brown roast on all sides. 2. Season with salt and pepper; remove from pan. 3. To pan add mushrooms and onion; saute for 2 minutes. 4. Add garlic, broth and bay leaf; return roast to pan. 5. Cover and simmer for 3 hours. 6. Add peas and cook 10 more minutes. 7. Remove roast to serving platter; stir in sour cream. 8. Serve roast with sauce. |
