A nicely cured bacon joint is a wonderful thing, especially when braised in a tasty stock like this one here. I like to serve it with my sweet potato and coriander mash. Ingredients:
1 kg bacon joint |
300 ml dry white wine |
300 ml vegetable stock |
1 teaspoon peppercorn |
2 star anise |
1 onion, roughly chopped |
1 apple, roughly chopped |
Directions:
1. Preheat the oven to 180 degrees. Place the bacon in a roasting tin with the wine, stock, peppercorns, star anise, onion and apple. Cover tightly with foil and roast for 1 hour. 2. Remove the foil and cook for a further 30 minutes until the bacon is golden brown. Transfer the bacon to a warm plate and leave to rest for at least 15 minutes before carving. Serve warm or chilled. |
