Brad's Mexican Chicken Meat

This meat can be used for tacos, burritos, quesadillas or enchiladas
Ingredients:
1 whole chicken
1 tablespoon salt
1 tablespoon cumin
1/2 tablespoon chili powder
1/2 onion, chopped
1 anaheim chili, chopped
Directions:
1. Place Chicken in a pot.
2. Cover with water, add salt.
3. Bring to a rolling boil for 20-25 minutes.
4. Remove chicken and pick meat clean.
5. Saute onions and pepper 5 minutes in a skillet.
6. Add chicken meat, 3 ladles of water used to boil chicken, cumin and chili powder. Cook until reduced by half. 10 minutes.
7. Serve in favorite tortillas.
