The breakfast of Champions...I imagine Rocky downing this. Actually it makes for a great starter with a light meal to follow.
Ingredients:
1 quart of good beef consomme, homemade best, the kind that will gel when chilled
3 dozen oysters, shucked, with the juice
4 slices of thick white bread, toasted, cut in rounds
4 egg yolks
compound butter
1 stick of softened unsalted butter
1/8 tsp of mace
1/8 tsp of nutmeg
1/4 tsp of fresh ground pepper
1 dash of tabasco
1/4 of a lemon juiced
1/4 cup of finely chopped parsley
Directions:
1. Mix the parsley, spices, hot sauce and lemon juice with butter.
2. Keep softened.
3. Toast bread rounds
4. Heat the consomme to just under boiling.
5. Add oysters until the edges ruffle
6. Assemble dish as follows:
7. Butter the toasted bread rounds with compound butter
8. Set in the bottom of a shallow soup bowl
9. Slide raw egg yolk very carefully on top of the bread round.
10. Ladle hot consomme with the ruffled oysters very gently over the raw egg and buttered toast.
11. The hot broth will gently poach the egg yolk and it will all meld into a delectable briny broth of goodness.
12. Rich! Follow with a salad and lots of tart vinaigrette.
13. Cheese and fruit would not be out of place as a final course.
