Irish potato griddle cake Ingredients:
1/2 lb potato, cooked in their skins |
1/2 lb grated raw potatoes |
1 1/2 cups buttermilk |
1 3/4 cups flour |
1 teaspoon baking soda |
salt & pepper |
2 tablespoons butter (for frying) |
Directions:
1. Remove skins from cooked potatoes. Mash with buttermilk. Add grated raw potatoes, flour, soda, pepper, & salt. 2. Scoop onto hot, buttered griddle to make 3 inch cakes. Fry until golden and crispy. 3. Serve with butter or honey. |
