This is really smooth and rich...NOT at all dry! Ingredients:
1/2 cup whole wheat flour |
2 teaspoons baking powder |
1 teaspoon sugar |
1/2 teaspoon salt |
1 cup cornmeal |
1 1/2 cups plain yogurt |
2 eggs (beaten) |
2 tablespoons olive oil |
olive oil (as needed) |
Directions:
1. Heat oven 425. Combine the flour, baking powder, sugar, salt and cormeal. 2. Combine the yogurt, eggs and oil. 3. Combine both. 4. Pour into a sprayed 9x9 baking dish. 5. Drizzle with a little more oil. 6. Bake 25-30 minutes. 7. Let cool completely before slicing. |
