Bow Ties With Sun-Dried Tomato and Scallion Sauce |

A very good pasta, my great aunt viola's recipe Ingredients:
5 scallions |
6 tablespoons sun-dried tomatoes |
1 cup light cream or 1 cup half-and-half |
1 lb bow tie pasta |
1 teaspoon salt |
1/2 fresh ground black pepper |
3 tablespoons of chopped fresh parsley |
Directions:
1. In food processor puree the scallions and sun dried tomato with 1/c cup of cream. 2. cook the bow ties with salted water. 3. reserve 1/2 cup of pasta water. 4. drain pasta and mix with puree. 5. mix the remaining 1/2cup of cream and the pasta water. 6. salt+ pepper and add parsley 7. if cream seems to thick add more of the pasta water. |
