Bow-Tie Pasta with Chorizo & Tomatoes |

Yummy, indulgent dinner... That isn't too horribly bad for you! [NOTE: You can use the long tube of chorizo OR chorizo links for this recipe.] From Eating Light (Woman's Day Special Interest Publication) Ingredients:
12 oz pasta |
1 tbsp olive oil |
2 cloves garlic |
8 oz chorizo |
1 pint grape tomatoes |
1/4 tsp crushed red pepper |
1/3 cup colby jack cheese |
Directions:
1. Cook pasta in lightly salted boiling water as package directs. 2. Meanwhile, heat oil in a large skillet over medium heat. Add garlic; saute until fragrant. Add chorizo; saute until browned. Add tomatoes and crushed red pepper; cook 1 minute or until tomatoes being to release their juice. Remove from heat. 3. Ladle off 1/3 cup of pasta water. Drain pasta; return to pot. Add chorizo mixture and cheese; mix gently, adding reserved pasta water as needed to make saucy. |
