Bourbon Sweet Potato Casserole |

Thanksgiving isn't complete without a warm, marshmallow-topped sweet potato casserole on the dinner table. Ingredients:
6 medium-size sweet potatoes (about 3 pounds) |
1/2 cup firmly packed brown sugar |
1/2 cup butter or margarine, melted |
1/3 cup orange juice |
1/4 cup bourbon |
1/2 teaspoon salt |
1/2 teaspoon pumpkin pie spice |
1 cup miniature marshmallows |
Directions:
1. Cook sweet potatoes in boiling water to cover 30 minutes or until tender. Drain. Let cool to touch; peel and mash potatoes. 2. Combine mashed sweet potato, brown sugar, and next 5 ingredients in a large mixing bowl; beat at medium speed of an electric mixer until smooth. Spoon mixture into a lightly greased 1 1/2-quart casserole. 3. Bake at 350° for 30 minutes or until thoroughly heated. Sprinkle with marshmallows and bake 5 additional minutes or until marshmallows are golden. |
