It took a couple tries to find the right recipe. This is very close to what you will get in Chinese restaurants. Ingredients:
1 lb boneless chicken breast |
1 lb boneless chicken thighs |
1 tablespoon olive oil |
1 teaspoon garlic, minced |
1/4 teaspoon ginger |
1/2 teaspoon crushed red pepper flakes |
1/4 cup apple juice |
1/3 cup brown sugar |
2 tablespoons ketchup |
1 tablespoon vinegar |
1/2 cup water |
1/3 cup soy sauce |
1 tablespoon cornstarch |
1 tablespoon cold water |
Directions:
1. Add chicken to a large pot heated with oil. 2. Slightly brown the chicken. 3. Remove chicken and set aside, drain the pot. 4. Add garlic, ginger, crushed red pepper flakes, apple juice, brown sugar, ketchup, vinegar, water and soy sauce to the pot over medium heat. Bring to a boil and simmer for 20 minutes. 5. To thicken the sauce, add corn starch and water. 6. Add chicken to the sauce just long enough to reheat the chicken. 7. Serve over rice. |
