Have been making this one for the holidays for many years. Found the recipe in Southern Living's...Party Potpourri. Southern cooks have great ways! You can even freeze this one...improves with age. Ingredients:
crumb crust: 1 1/2 cup vanilla wafer crumbs |
1/2 cup melted butter |
1 tablespoon sugar |
1/2 cup crushed pecans |
filling: 1/2 lb butter, no substitutes |
1 box (1lb) confectioners' sugar |
6 eggs |
1/3 cup bourbon |
Directions:
1. Combine the first four ingredients to make the crust 2. Press into a 10 inch pie pan 3. Bake 5 minutes at 400 degrees 4. Cool completely 5. Cream the 1/2 pound of butter and confectioners' sugar with a large standing mixer 6. Add eggs, one at a time, and mix very well after each addition 7. Use only 5 eggs if you have a small mixer 8. Add bourbon in a very slow stream. Bourbon cooks the egg mixture. 9. The filling will look curdled at first, but will become smooth and creamy 10. Turn into cooled crust and chill or freeze for a couple of hours 11. Improves and mellows with age |
