I learned about bourbon balls in Louisville, KY. More recently, I experimented with rum in lieu of bourbon with great results. A delicious, special dessert treat! Ingredients:
1 cup finely crushed vanilla wafers |
1 cup finely chopped pecans (i use a grinder) |
1 cup of confectioner’s sugar |
2 tablespoons of cocoa powder |
2 tablespoons bourbon or rum |
1 tablespoon light corn syrup |
powdered sugar, cocoa powder, finely shredded coconut, or finely chopped nuts for coating the balls |
Directions:
1. Combine vanilla wafer crumbs, the pecans, the confectioner’s sugar and the cocoa powder; 2. Combine the bourbon (or rum) and corn syrup; stir into the dry mixture. If mixture appears too dry, add more light corn syrup or a little more bourbon/rum; 3. When thoroughly blended, cover and refrigerate for at least an hour; 4. Shape dough into balls, maybe two teaspoons per ball. Roll each ball in powdered sugar, cocoa powder, finely shredded coconut, or finely chopped nuts; 5. Store in the refrigerator. |
