Bourbon Honey Orange Cheesecake |

Usually make this around the holidays or when suffering from a scratchy throat ;-) Ingredients:
crust |
2 cups slivered almonds |
1/4 cup sugar |
1/4 cup butter (unsalted) |
filling |
2 pounds cream cheese (softened) |
3/4 cup honey |
1/2 cup bourbon |
1 tablespoon orange zest |
3 tablespoons cornstarch |
3 large eggs (room temperature) |
topping |
3/4 cup sugar |
2 ounces water |
1/2 cup silvered almonds |
Directions:
1. For Crust: 2. Grind almonds and sugar in a food processor. 3. Melt butter in small pot then combine with almond sugar mixture 4. Press crust mixture into a 16” spring form pan 5. For Filling 6. Whip cream cheese until light and fluffy add honey, orange zest and cornstarch, adding one egg at a time, mix until incorporated, 7. For topping: 8. mix sugar and water in a small pot and cook over medium heat until carmalized (Stirring continuously) 9. Add almonds and pour onto a sheet pan and let sit until cool. 10. Break and grind topping. 11. Pour cheesecake filling into spring form pan. 12. Bake in a water bath at 300° F for one hour. 13. Sprinkle with ground almond & sugar topping mixture. 14. Let cool before serving. |
