this is so good-maybe not for the kids-can be made without the bourbon for them Ingredients:
1/4 cupbutter |
,1 cup chopped shallots |
,3 minced garlic cloves |
,1 large bell pepper chopped |
,3 cups fresh corn kernels,or 3 cupd good canned or frozen |
,2/3 cup whipping cream ,divided |
,1/4 cup bourbon |
,1 and 1/4 cups chopped green onions |
,divided |
Directions:
1. melt butter in large skilleton medium high 2. .add shallotsand garlic 3. ,saute 2 minutes 4. ,add red pepper and saute one minute 5. ,add corn,and saute another 2 minutes 6. ,add 1/2 cup cream and bourbon 7. ,simmer 8. till sauce thickly coatscorn,stirring another 2 minutes 9. ,add remaining1/3 cup cream and1 cup green onions 10. ,simmer another 2 minutes till thickened 11. ,season to taste with salt and pepper 12. ,transfer to bowl and sprinkle with remaining green onions and serve |
