this a very rich chocolate cake.. nice and chocolaty.. with a nice background flavor of pecans.. use a good bourbon for the best outcome.. this recipe is from the gifts from the kitchen cookbook. It suggests for the chocoholics to serve this with Heavenly Fudge sauce. Read more .. !! you need to chill the finished cake down for 8 hours Ingredients:
2 packages ( 8-ounces each) semisweet chocolate squares, chopped... use the best quality that you can find |
1 cup butter, cut into pieces |
2 cups sugar |
3/4 cup pecan pieces, toasted |
1/4 cup bourbon, one with a good flavor |
8 eggs |
1 tbsp. powdered sugar |
Directions:
1. grease a 10-inch springform pan and line the bottom with parchment paper or waxed paper. grease the paper and set aside 2. ............................................................................................................................ 3. Microwave chocolate and butter in a 1 quart glass measuring cup 4. on medium power (50%) for 5 to 7 minutes or until melted 5. stirring every minute 6. let stand for 15 minutes 7. Process sugar and the pecans in a food processor until ground 8. stopping once to scrape down the sides 9. transfer to a large mixing bowl 10. stir bourbon into the nut mixture 11. add eggs one at a time beating on low speed until blended after each addition 12. add chocolate mixture and beat on low speed until blended 13. pour into the prepared springform pan 14. preheat oven to 350'F and bake for 30 minutes or until set. 15. cool completely in the pan on a wire rack 16. then remove sides of pan. cover torte and chill for 8 hours 17. sprinkle with powdered sugar before serving 18. for the chocoholics the cookbook suggests serving with warm 19.
