This was my entry into our family's latest cooking competition. In this round, all recipes had to include alcohol in some form. It was well received but lost out to a homemade vodka cream sauce. Note - cooking time does not include marinating time. Ingredients:
2 lbs chicken tenderloins |
1 lb bacon |
1 c bourbon |
1/2 c olive oil |
2t cider vinegar |
1/4 c minced red onion |
1t dijon mustard |
cherry tomatoes |
sour cream |
crumbled blue cheese |
Directions:
1. Mix all ingredients except sour cream, tomatoes, blue cheese, chicken & bacon in a baking pan. 2. Cut bacon slices in half. 3. Cut chicken tenderloins into pieces about 3 in. long. 4. Wrap chicken in bacon slices and thread onto skewers. 5. Put assembled chicken into marinade arranged so skewers are not completely submerged but chicken is and marinate (preferably) overnight . 6. Preheat oven to 400. Arrange skewers on rimmed baking sheet. 7. Bake about 20 min, checking frequently & turning once during baking. 8. Mix sour cream (about a cup) with blue cheese to taste, add salt, pepper & garlic if desired. 9. Thread cherry tomatoes on the ends of skewers & arrange on platter with sour cream dip on the side. |
