Make several bouquet garnis, and freeze them in heavy-duty, zip-top plastic bags to keep an easy seasoning on hand. The flavor will stay fresh for up to one month. Ingredients:
1 tablespoon fresh marjoram leaves |
1 tablespoon fresh thyme leaves |
1 tablespoon fresh oregano leaves |
1 1/2 teaspoons fresh whole sage leaves |
1 1/2 teaspoons fresh rosemary |
3 cloves garlic, peeled and slightly crushed |
2 bay leaves, halved |
Directions:
1. Combine all ingredients on an 8-inch square of cheesecloth; tie ends of cheesecloth securely. Add bouquet garni to soups, stews, or vegetables cooked in a small amount of water. |
