(Length of time doesn't include freezing) Perusing a dog-eared fave cookbook from the 1970s era. Had all ingred. on-hand for half the recipe....... It is very good! Ingredients:
2 (10 ounce) pkgs frozen chopped spinach |
2 cups seasoned stuffing (i had cubes, next time will crush to big crumbs) |
1 cup parmesan cheese |
6 eggs beaten (eggbeaters i used) |
3/4 cup butter, melted (3 t. in half recipe) |
1 tsp. salt/pepper to taste ( tsp. garlic powder and 1/2 tsp. onion powder, few shakes poultry seasoning) |
Directions:
1. Cook spinach as per directions on package; drain all water off! 2. Add all the other ingredients and mix. Form into balls (1 inch diameter-this is where the bread cubes screwed up!!) Line up balls on baking sheet , ungreased if All the butter is used; spray or parchment paper if not. Freeze. Later the frozen spheres can be stored in freezer bags. When ready to serve bake at 350 degrees for 10 minutes. Serve warm. |
