This is a decadent, buttery pastry eaten as a snack with tea or coffee. Rich doesn’t even begin to describe this!
Ingredients:
20 oz cold, salted butter
2 1/2 cups superfine sugar
5 cups flour
2 eggs, beaten
Directions:
1. Put the flour and sugar in a bowl add the butter on top. Cut in the butter, mixing it through the other ingredients.
2. Add 3/4 of the eggs and mix until you get a crumbly dough.
3. Put the dough onto a baking tray and push it together until you get a layer about 1/2” thick. Cover the dough with the remaining eggs, smearing it out evenly with a spoon.
4. Bake at 385° F for about 25 minutes
