Slightly sweeter version of an old southern standby, makes great muffins too!
Ingredients:
1/2 c cornmeal
1 c flour
1 c milk
1/2 c sugar
1/2 teas salt
1 tbl melted butter
1 medium egg, lightly beaten
2 teas baking powder
Directions:
1. Combine dry ingredients and sift into medium bowl. Blend in Egg and milk. Melt butter in a 8 iron skillet. Remove from heat. Immediately stir in cornmeal mixture. Bake at 425 degrees for about 30 minutes. You may add melted butter to mixture and bake in an 8 baking pan if your kitchen is lacking ironware.
