This is a great, easy bean recipe. We love these as a side dish with just about any meal. Ingredients:
1 can pinto beans, undrained |
1 clove garlic, minced |
1/2 large onion, finely chopped |
cilantro |
1 large tomato, finely chopped |
3/4 teaspoon cumin |
1/4 teaspoon oregano |
1 teaspoon chili powder |
salt and black pepper |
Directions:
1. Combine all ingredients in a saucepan. 2. Bring to a boil. 3. Simmer for 30-45 minutes, adding water if mixture gets too thick. |
