May used canned chicken or purchase precooked chicken breast slices. Ingredients:
2 cups chicken, cooked and diced |
3 stalks celery, diced |
3 tbsp cilantro, chopped |
6 scallions, sliced |
guacamole dressing |
1 avocado |
1/2 cup yogurt |
1/4 cup olive oil |
1 tbsp lime juice |
1 clove garlic, crushed |
1/4 tsp hot sauce |
1/4 tsp salt |
Directions:
1. Chop everything up, make dressing, combine it all, and toss. You can serve this on a bed of lettuce or just eat it straight up 2. Dressing: Cut the avocado in half, remove the seed, and scoop the flesh into a blender or food processor. Add the yogurt, olive oil, lime juice, garlic, hot sauce and salt, and blend until smooth. |
